  • Fermentation threshold (yeast active): ~18.0–19.0% depending on yeast count
  • Optimal long-term storage: ≤17.0%

Honey is hygroscopic — it absorbs moisture from the air. Keep bottled honey in sealed containers below 60% relative humidity to prevent moisture creep above safe thresholds.
